One of my mum's favourite desserts, and one that gets a tick from me.
But, as always, there's a reality check, and a check of the cupboards.
And with a reliance on everyday items, and an appreciation that this would be for Mr J and I to devour...
It seemed right to avoid the tiramisu and dreams of a fondant.
And try for a pudding cake.
So we took the best bits and created a mocha pudding cake.
And with Mr J, the man who never orders a dessert, stating he'd order this a second time,
I knew my taste buds weren't deceived.
Ingredients:
Base
125g self raising flour
90g hot chocolate powder
2tsps baking powder
75g caster sugar
220mls milk
1 medium egg
1tbs vanilla essence
50g melted unsalted butter
Topping
30g cocoa powder
75g caster sugar
150g dark brown sugar
180mls strongly brewed coffee (20g) at room temperature.
Method:
- Preheat the oven at 160 degrees celsius.
- Combine the flour, hot chocolate powder and baking powder in a bowl.
- In a separate bowl, whisk the milk, melted butter, vanilla essence and egg, and gradually add the 75g of caster sugar.
- Fold in the dry mixture to the wet mixture and whisk until combined and smooth in consistency.
- Pour the mixture into a baking dish.
- Combine the cocoa powder, caster sugar and brown sugar. Layer over the batter.
- Pour the coffee over the top.
- Place in the oven and bake for 20 minutes, or until the cake is bubbling with a firm top.
- Cool for 5 minutes before serving.
